The honey is deep amber and resinous, with the bitterness of oak bark at its edge and a note of dried fruit underneath.\u003c\/p\u003e\u003cp\u003eCut by hand from trees between 1,800 and 2,100 metres, leaving the colony two-thirds of its comb. Never heated, never fine-filtered. Sealed in beeswax with its batch number and laboratory report.\u003c\/p\u003e\u003cp\u003eThe wild colonies we follow across Anatolia give about four kilograms of honey a year in total.
