The Special Collection · 1 kg
Fully strained wild honey of the 2026 season, from colonies that live in the caves, hollow oaks and cliff faces of Anatolia's high country in Türkiye. Nothing is added and nothing is taken away but the wax: the comb is crushed by hand, left to run through cloth in a cool room, and bottled at the temperature it left the mountain. No heat, no filtration under pressure, no blending with anything that is not this harvest.
The result is a deep amber honey of exceptional clarity and unusual strength. Two TÜRKAK-accredited laboratories tested this harvest: diastase activity of 44.27 Schade units against a legal minimum of 8, HMF of 6.2 mg/kg, proline at 534.56 mg/kg, and no trace of added sugar. Both reports travel with the jar.
One kilogram, drawn from the first run of the harvest, in a single large jar presented in a walnut box lined with linen. It comes with both laboratory reports, a handwritten note on the season, and the option of engraving. One is made each year. The whole harvest is about four kilograms a year.

The season's reserve, in one vessel.
Drawn from the first run of the harvest: the deepest, most aromatic honey of the year, glass-clear, with a finish that lasts minutes rather than seconds.
