Above the tree line the season lasts six weeks. Thyme, sainfoin, clover and a hundred alpine flowers bloom together and are gone; the colonies that forage them, in rock crevices between 2,300 and 2,600 metres, make a pale, bright honey that tastes of altitude.

The shortest season we harvest and the smallest allocation. Never heated, never fine-filtered. Sealed in beeswax with its batch number and laboratory report.

The wild colonies we follow across Anatolia give about four kilograms of honey a year in total. This jar is part of that four kilograms, which is why it is numbered.
