A slab of comb cut whole from the colony, cells capped and sealed by the bees, untouched by any tool but the blade that freed it. Chew it: the wax gives up honey slowly, then the honey gives up the mountain.
Origin varies by harvest, cave or hollow oak, and is named on the box. Packed in parchment in an unfinished oak box. Never heated, never cut open before you.
The wild colonies we follow across Anatolia give about four kilograms of honey a year in total. This jar is part of that four kilograms, which is why it is numbered.
From the mountain
The comb, exactly as the bees left it.
Wax first, then a slow release of dark honey; the flavour of the origin it came from, undiluted. Serve at room temperature on a stone board.
