From colonies that build in the cool, constant dark of limestone caves between 2,100 and 2,400 metres. The comb grows slowly here, and the honey is nearly black: dense, mineral, faintly smoky, with a long bitter-sweet finish that stays on the palate.

Cut from the comb by hand. Never heated, never fine-filtered, never blended across origins. Each jar is sealed in beeswax and carries the number of its batch and the laboratory report that belongs to it.

The wild colonies we follow across Anatolia give about four kilograms of honey a year in total. This jar is part of that four kilograms, which is why it is numbered.

From the mountain

Grown in the dark, a comb at a time.

Dark, mineral and faintly smoky, with molasses depth and a bitter-sweet edge that lingers. Best alone, from the spoon, or with aged sheep's cheese.
